Pazham Nirachath/stuffed banana

Ripened Banana /Nenthrapazham - 4nos

For stuffing:

Grated Coconut- ½ cup Cashew nuts or Almonds- 8-10 nos(chopped) Raisins -5-6nos Sugar-2 tbspn Cardamom Powder : 1tspn Ghee / Butter- 2 tbspn Oil -1tbspn

For Covering:

All Purpose Four- 1/4 tbsp Sugar-2 tbspn Salt a pinch Water -as needed to make a thick paste

Preparation

Heat a pan, add ghee, cashews and raisins and stir fry cashews and raisins and then add grated coconut and sugar in the same pan, saute for couple of minutes add cardmom powder and mix well and off flame and allow them to cool . Peel the banana, and make a shallow slit lengthwise. Remove the black seeds. Take about 2-3 tbsp of the coconut-nut stuffing and gently fill it into the slit in the banana using your hands, push the stuffing inside the banana as much as you can. Mix together all-purpose flour, sugar, salt and add water to this and make a thick batter out of it(consistency of a gum)Heat oil/ghee in a pan and deep fry them till they turn golden color, and transfer to plate and enjoy with tea !
