Elanchi (Malabar dish)

Ingredients
All purpose flour (maida) - 1 cup
Egg – 1
Water -1cup
Grated Coconut - 1½ cup
Sugar - 2-3 tbspn
Cardamom Powder - ¼ tspn
Turmeric powder – one pinch
Fried cashew nuts - 10 nos
Fried raisins - 10 nos
Salt -a pinch
Preparation
Heat a pan and add sugar and water to make a syrup. Add coconut and keep it in medium heat. When it becomes thick remove from fire. Add fried cashews, raisins, cardamom powder and mix well. The filling is ready. Break the egg into a bowl and beat it well. Add the flour, turmeric powder, salt and mix it well. Add enough water and prepare a smooth batter. The batter should be thinner than the dosa batter. Heat a non stick frying pan and pour a spoonful of batter in the centre, spread with the back of the spoon to a thin round. Keep on medium flame. When it is cooked on one side, place a spoon of coconut filling on one end of the pancake and roll it.
